Rooted in The Cultures, Salt, & Enzymes
The early 2000’s transformed global connection. Lingering excitement about the new millennium inspired many to forge a new path as technology and communication blossomed in this digital age. At this time, societies across the globe became increasingly aware of each other's cultures, leading to an enhanced interest in art, music, fashion, and foods from around the world.
Cheese was not left out of this modern renaissance, and the international market took notice of the innovations in the U.S. artisan cheese industry.
Cheese has been made by many nations for centuries. Believed to have first been created in the Middle East around 8000 to 7000 BCE, cheese was a nutrient-rich, versatile, and sustainable cultural food since the dawn of its discovery.
Artisan and specialty cheesemakers from around the United States craft cheeses rooted in those time-honored traditions, inspired by both their own family heritage and the heritage of cultures they deeply respect. In the fashion of American culture, many of our cheesemaking artisans have also sought to introduce their own “American Originals.” Some have become a full range of well-known styles: Colby, Cream Cheese, Monterey Jack, and Brick. Others stand on their own, defined by their unparalleled individuality.
Establishing The Exchange
Our journey began with our founder, Chris Gentine’s desire for something different. During the pivotal time of change in the early 2000s, the cheeses that started coming out of the American artisan industry were phenomenal and, frankly, cool. As foodies and cheese enthusiasts, Chris and his wife and co-founder, Julie, wanted to be a part of it all.
They discussed opportunities with industry friends and colleagues, and decided to focus on the untapped potential of export. Chris and Julie wanted to help bring this new wave of American artisan cheeses to other cultures and find their fit. During a trip to Japan, they were inspired by stunning displays of artisan cheeses imported from Europe, and the passion truly took root. They said to each other, “We can do this.” In 2006, they did.
Their mission was clear: to establish a new category and deliver frequent shipments of consistent high-quality American specialty cheeses around the world. They would simplify the process for both U.S. cheesemakers and international buyers, and in turn, help showcase the cheese artistry being established in the United States
Despite initial hurdles, perseverance paid off, earning early successes in Japan, Taiwan, and the UK. Today, we continue to work with partners old and new to grow the American artisan cheese industry abroad, in addition to continuously shaping our own brand, Deer Creek Cheese.
In nearly 20 years of doing this work, we have developed a deep understanding and appreciation for the rich culture of cheesemaking. Since we started, the interest in specialty cheese has skyrocketed while the ingenuity of today’s cheesemakers has soared. We’re proud to be a part of this industry and to help share the simple pleasure of exceptional cheese with the world.
